The various meat and fish varieties, poultry and game, vegetables and herbs as well as rice and noodles are always of the best quality and are refined.
For us, this tradition is a commitment. We are very intensively involved with the cooking of Vietnam, rummage through old cookbooks, research and search for old cooking recipes – and can thereby develop and modernize traditional dishes to offer our guests always something new.
This is our ultimate goal: to let our guests enjoy this wonderful cuisine.
To my grandmother I owe the love of cooking – the love of food, however, belongs to every Vietnamese. The Vietnamese cuisine is traditionally diverse and rich and has been positively supplemented by the French influence.
The Vietnamese understand food preparation as a high art; In her kitchen reflects her past, religion, philosophy.
The three basic pillars of the kitchen are rice, fresh herbs and fish sauce. In Vietnam Reisoft is further processed, for example to thick rice noodles or to rice paper. Meat and vegetables are wrapped with the rice paper to the typical roles. They are raw as fortune rolls, goicuon, steamed as mandarin rolls, banh cuon, or deep fried as classic spring rolls, chagio or nem. Vietnamese love the rolls, often eat two or three varieties as a starter. Then the herbs – in Vietnam there are hundreds, many of them only here: different basil and mint varieties, the national herb rau ram, a mint-sharp coriander style plucked over almost every meal, or the fine rough ngo gai, a floral coriander style . The third basic pillar, the fish sauce nuoc mam, is always there – for salting and seasoning during cooking, as a marinade, dressing or dip similar to the soya sauce in the other kitchens of Asia.
